¼ kg of corn (Cancha Chulpe Corn, Roasted Mountain Corn, or Corn for Toasting)
2 tbs of oil (optional)
Salt (to taste)
Place the corn in a frying pan over medium heat. Cover it on one side and move it constantly with a wooden spoon. For a more delicious taste add some oil. The corn will start to pop, this is normal. It takes about 10-15 minutes for the corn to stop popping. That will be the sign that they are ready. Add salt just prior to removing it from the fire.
Remember if you stop moving the corn with the wooden spoon the corn will burn, DO NOT stop stirring the corn while it’s frying.
NOTE: Toasted Corn can be served cold or hot. It can be enjoyed on its own or as an accompaniment for Ceviche or other dishes.
